The reason casein is digested more slowly than other proteins is that it is composed of water-insoluble microfractions called casein micelles. When they enter the stomach, they form a kind of gel – a dense protein mass that enzymes cannot “attack” and break down the peptide bonds, normally quickly! Enzymes figuratively tear off small fractions from the surface of the dense mass-gel which are then broken down and absorbed into the small intestine. This process (depending on the amount of casein taken) continues for up to 8 hours until it is completely digested!
