Honeydew honey is honey that is made when bees collect honeydew from the leaves, stems, and bark of trees and other sap-producing plants.

Action:

Honeydew honey can be “polyfloral” – it comes from different types of plants, with no single species making up more than 10% of the total. But we must remember that honeydew honey cannot be categorized as a floral honey.

It is also possible for honeydew honey to be “monofloral,” when more than 10% of its source comes from a specific species such as pine, silver fir, beech, or others. Honeydew honey can be very diverse, based on its appearance, taste, and aroma.

It generally tends to be darker in color, has a strong flavor profile, and is medium in sweetness. Honeydew honey typically has a strong and distinctive aroma that can be resinous, piney, herbal, or malty.

Honeydew is very high in sugar, so honey bees eagerly collect it. Bees collect honeydew in a process similar to collecting nectar. When a honey bee collects the honeydew, it mixes with an enzyme in the bees' mouths. The enzyme itself is known as "invertase" or "bee enzyme," which is secreted by the bees' glands.

Honeydew honey has higher levels of oligosaccharides than its floral-based cousins. It is made up of two or more simple sugars, known as monosaccharides. These help the body absorb and digest much-needed nutrients and minerals.

When the honeybees return to the hive, they will transfer the honeydew they have collected to each other, further mixing the nectar with “bee enzyme.” This will reduce the water content, turning the honeydew into “honey.” They will then deposit the honeydew honey into wax cells.
